Land at Lihue (LIH), pick up your rental, and drive 30 minutes south to Poipu — Kauai's sunniest coast. Check in, then walk to Poipu Beach Park for your first swim. The beach is a series of crescent coves with a natural wading pool (perfect for floating), and Hawaiian monk seals regularly haul out on the sand (give them 150 feet — it's federal law).
As the sun drops, walk the Maha'ulepu Heritage Trail along the cliffs — 2 miles of coastal views, sea turtles in the coves below. Dinner in Koloa (the old plantation town): Merriman's Fish House (farm-to-table, sunset views) or Keoki's Paradise (tropical, live music). Early night — the boat leaves early tomorrow.
Evening: Koloa town
Koloa is Kauai's oldest plantation town (1835) — a 5-minute drive from Poipu. The historic storefronts now house galleries, shave ice, and restaurants. Merriman's Fish House (Poipu, at the Kukui'ula Village) is the splurge: Hawaii Regional Cuisine, 90% local ingredients, sunset over the ocean. For casual: Da Crack (Koloa, plate lunch, burritos the size of your forearm). The Kukui'ula Village shops stay open late — strolling with ice cream is the Poipu evening ritual.
Where to stay
Grand Hyatt Kauai (Poipu, beachfront, best pool complex); Koa Kea Hotel & Resort (Poipu, boutique, adults-oriented); VRBO in Poipu Kai (condos with kitchens, best value).
